    I use my oven all the time when making large batches of summer sausage. I use 2 racks and swap every half hour to keep the cooking even for all.

    The roaster method actually worked pretty well to finish the sausage.  Typically when i would try to finish in the smoker and at times in the oven i would get hot spots where part of the sausage would get burnt or dried out and other spots were not up to temp.  With the water bath all of the sausage is at the same temperature so it is a more consistent product.  I found that i needed to keep the dial on the roaster around 375 to maintain the water temp at 160 ish.  Summer sausage with hi temp pepper jack cheese.

    Too bad. We're all havin' a good time, or we wouldn't be posting.  Even learning some things along the way.That's what it's all about, IMO. Also appears that Reb is the staff guy of the cooking thread.

    Yep, you're right pf.. he hung in until the night of the  mods duking it out. It's too bad really. Well since this thread has already been hi jacked,  I don't feel bad. Took a 3# roast out and sliced it up into steaks. They are marinating now... I'll show pics later.

    Well said del. Well mike since your roast thread got cut up so did the roast. Waiting for the coals but here is the bacon wrapped beauty's waiting for the cast iron..

    9 pounder is on, throwing some more hickory at it for about an hour then let the coals do the rest. They sure are good and make great soup bones!!

    I do catch a few competition cook offs now and then, but I'm not sure if I've ever seen anyone show up with a boiling contraption.

    Looks awsome Grainbelt I need to get a dehydrator that's for sure.  Cold smoking on some salmon, tilapia and some cod ( just for a few hours then some heat and more smoke). Dry brined the salmon over night but the cod and tilapia was for a few hours. Never done cod before so we'll see. Never know, it might be a popcorn dinner after I'm done with these!
