    Update: everything went as planed, finished the smoke, tented in foil, then into the frig overnight.
    sliced, bagged and sealed. The flavor is perfect, just the right amount of smoke. I used Apple wood(I don't have cherry) I can't wait to try it with my eggs tomorrow, I keep looking at that breakfast photo that Eyeguy posted. I'll definitely be making this again.

    Not so funny.  I know this will be deleted but I'm leaving HSO again.  This time for good.  nothing has changed.  Backroom deletes Reb's  complaint although nicely put just like they did to me a couple of years ago.  So Limit can change and delete posts but Reb cant even though he is the moderator of this forum and did a pretty dam good job.  I love the guys on this forum and have been positive all this time until Limit came on here and threw his weight around.  Ya I get it, and finally get it.  My information and others that contribute are just being used.  treat Reb like a low life because he  tried hard to get this right but that's not good enough for your little club in the backroom.  Delete his posts there and here on the forum along with mine when I spoke my opinion.  Go get some other guy,  I'm not your guy.  Nobody on here is appreciated and you can tell by those who left.  All this phony talk with the smiley face's is transparent.  Start treating posters who MAKE this thread equal to to some of these so called Pro staff moderators the same and maybe you will progress.  Limit gets away with his talk and others are treated totally different.  Good bye.

    Holy buckets I am glad I was gone for the weekend and you guys got this all sorted out.  I hope we didn't lose anyone, great bunch of friends here.  A friend turned me onto this page a few years ago.  At first I just looked at the fishing regions stuff, then the classifieds.   Then I made a frig smoker and started looking at different sites online.  I realized there was a cooking thing here and dove into it.  Man what a storehouse of knowledge I found.  AND a great group of guys, maybe even a gal or two, who really knows.  Now this Good Morning thing has taken hold and it is one of my favorite parts of my day.  My wife thinks it is funny and great how I talk to you guys most mornings.  IT IS GREAT!  What a social group we have become.  Lots of humor and that is mainly what the hijacking is all about.  Simply humor!   We get it, maybe some don't but they will if they hang around and get to know us.  
    Had a great weekend at my brothers, yup lots of wine and good food.  Had my first deepfried dill pickles too.  They were great!  Had a homemade ranch dressing that was awesome too.  Could have dipped a shoe in it and would have been good...  My brother got a real nice pool table so we played a lot and had a lot of fun and didn't have to dance since we kept busy doing that.  Did have some Outlaw Country playing though.  My brother did a pork loin on his Daniel Boone and we cooked the heck out of it.  Way overdone but we still ate it.  lol  I tried to explain how this group of comedians online has come to be a group of online friends and they sort of understood and thought it was pretty funny too.   I told them it all started with good recipes and smoking and sausage advice.  I told them a retired after 40 years of being a butcher had the best tips and ideas.  Sort of the sausage ring leader.  
    Well keep up the good work all, nice to be back.  I am having 3 soft boiled eggs, tacked of course, and leftover NY strip done just right on the grill last night.  See ya all later, I am going to Bemidji to pick up a 14' boat for the early ice and late season here on the river.

    RH's Canadian bacon. Been in the brine for 10 days. Into the smoker tomorrow. I'm really looking forward to the final results. I'm trying to decide if I should use apple or hickory to smoke?I'll keep you posted.

    Ya me too.  When I say I am going to take a nap I take a nap.....   lol    If I see the wife doze off I stay as quiet as I can to be considerate to her.  I can go to the shop or fish or whatever.  The other night after my two nights of bad sleep I was so tired.  I fell asleep watching TV.  Wouldn't you know it, she came right up and started talking to me when it should have been obvious I was out.  Sort of irritated me.  My ex used to do that all of the time.  Hey wake up and go to bed.... GGRRR   I never once did that to her.

    Hi ya fellas,  what a yucky kinda day. Softball is cancelled tonight so just doing some tinkering here and there.  Naps, great day for one, although the pooch probably won't let me, we could almost get a thread going with naps. The funny thing is back when the kids were younger the Mrs and I would joke that it's nap time,  not only for the kids but for us to sneak in a nooner, now it's actually nap time..lol. Burgers weren't suppose to be on the menu tonight, but with all change in plans, I'm grilling firing up the weber again .

    Mornin' everone! You too smurf (since I don't think you'll see this for a while) 
    Chores done (casualties 0), cutworm trap read (0 moths), rain gauge read (.48"), thermometer read (39 degrees) breakfast eaten (generic Cheerio's) coffee made (10-W-30). Another cloudy one with the promise of sun tomorrow, with the promise of rain again Saturday. Mrs. Cheviot has decided to go on the cruise Saturday after all so I won't need all those towels in the car. I usually have some to wipe the car down for those thinking perverse thoughts. You know who you are. 
    Had to laugh at her the other day. Preparing to mow lawn I dug the trusty old Agco-Allis I call Howard out. Howard was the name of the old guy that had it and when I acquired it, the name stuck. Aired the tires up, greased it, checked the oil, fueled it up and proceeded to tear into it.  I don't think much about it as mowing lawn is a pretty mindless job. My primary function is to hang on, not get knocked off by a tree limb and listen to the tunes. I was just happy that everything functioned well enough to make the start of another season. The exhaust pipe to the muffler has a crack in it so it cackles a little. The part is more $ than the mower is worth so as long as it doesn't become a fire hazard, we're golden.
    When I finished mowing I put it away and went inside. The first thing Mrs. Cheviot said, "That thing is really loud!!!! I tried to take a nap and I couldn't!" Hmmm...I grinned saying nothing as a crafty veteran of avoiding these potential skirmishes. You can think it; just don't say it. A couple things: 1) I can't hear it with my radio muffs on. If I can, it means the tunes aren't loud enough. She should be familiar with that technique judging by the volume level of the radio and some of the racket emanating from the car when I recently drove it, and 2) Now you know how I feel when you feel compelled to yap on the phone with the TV on when I'm trying to nap!

It'll be nice to get them done, so I can spend more time fishing, scouting deer, etc, etc. The way it's going, I might even have to mow the yard this weekend- good excuse to have a couple beers!!!

    There are several names for this method of slicing but basically you start on the 2nd rib and cut as close as you can to the 1st rib, and as close as you can to the 3rd rib.  The 2nd rib now has generous meat on both sides of it.  Slice at the other side of the bone on the 3rd rib so that the 4th rib will be like the 2nd rib. You continue this process for the rest of the rack. Ribs 3, 5, 7 and so on are just bones and get discarded.  This takes a little more time, but you deliver double the meat on each bone.

    the cleaver smashes them too.  Last night I made ribs and I did something different.  It was just three of us so I cut the ribs in about four rib sections and everyone got a 1/3 slab or so.  Looked pretty on the plate and they then cut them themselves.  I noticed that they smashed them less.  I think when you only are cutting your own rather than being in charge of cutting 2-3 racks you take your time.
    The solution may be to not cut them up for everyone.  Cut them in 3-4 rib portions.
